The tradition of sparkling wine comes from the territory and climate: flat region and hot summer. So the effervescent solution was the only opportunity to have wines in this land.
Historically the fermentation came into the bottles; when the spring temperature reached 18°C, the wine began the fermentation with no support of machine or temperature controlled.
Now some winemakers keep on the tradition and the wine is named sur lie.
